Certified organic groves
Organic extra virgin olive oil is made from olives grown under a certified organic program — no synthetic herbicides, no systemic insecticides, no fertilizers outside the approved list — with annual inspection by an accredited certifier whose name appears on the label. Certification governs the grove, not the mill schedule, so organic status on its own says nothing about freshness or flavor. We treat it as a floor: every organic oil listed here also has to clear the same acidity, peroxide and sensory thresholds as the rest of the range.

Inputs, buffer zones between organic and conventional plots, record keeping, and an annual on-site audit. Imported oils are certified to USDA standards through recognized equivalence arrangements, and the certifier code should be printed near the seal.
It does not cover harvest timing, milling temperature, filtration or storage — the variables that decide how the oil tastes.
There is no reliable evidence that organic certification alone raises phenolic content. Cultivar, harvest timing and milling do that. Buy organic for the agronomy, and read the harvest date and polyphenol figure for the flavor.
