Olive Oil Polyphenols Explained

Polyphenols are the phenolic compounds naturally present in olive fruit that survive mechanical extraction — oleocanthal, oleacein, hydroxytyrosol and their relatives. They are what you taste as bitterness on the tongue and pungency in the throat, and they act as antioxidants that slow the oil's own oxidation. Typical supermarket extra virgin runs 100–250 mg/kg; oils sold as high-polyphenol usually measure 500 mg/kg or more. The figure is driven by cultivar, harvest timing and milling, and it declines steadily with age, so it is only meaningful alongside a harvest date.
What raises and lowers the number
Raises: Koroneiki, Picual, Coratina and Moraiolo cultivars; picking green before full veraison; short, cool malaxation; fast milling; nitrogen-protected storage.
Lowers: ripe or over-ripe fruit; delicate cultivars such as Arbequina and Taggiasca; warm processing; time, light and heat in the bottle.
Reading a measured figure honestly
A polyphenol number is a measurement of one lot at one moment. Ask which lot it belongs to and when it was taken. A figure printed on a label two harvests old describes an oil that no longer exists.
