Arbequina Olive Oil

Arbequina is the gentle end of the olive oil spectrum: apple, banana and almond on the nose, soft bitterness, and a short, sweet finish. Originally Catalan, it is now the default cultivar in high-density groves worldwide, including most of California. Its phenolic content is naturally lower than Picual or Koroneiki, which makes it approachable but also shorter-lived in the bottle — buy it fresh and use it within months. It is the right choice for delicate food, for baking, and for anyone put off by peppery oils.

Where Arbequina works

Fish, shellfish, fresh cheese, mild vegetables, cakes and shortbread. It also makes a forgiving everyday cooking oil, though it will not carry a dish the way a robust oil can.

Because it is low in phenols, Arbequina fades faster. Check the harvest date carefully and avoid large formats unless you cook constantly.
