The story of this lot

The Governor is pressed on Corfu from Lianolia Kerkyras olives picked unusually early, when the fruit is still hard and green and the phenolic content is at its peak.

The olives are milled within hours of picking and the oil is bottled unfiltered, so the natural sediment and antioxidants stay in the bottle rather than being stripped out.

This limited-edition case of twelve 500 ml bottles is the format for households and chefs who use a high-polyphenol oil daily and want a full season's supply at once.
