The story of this lot

HOLIVE sources its fruit from historic groves in the land of Israel, where olive cultivation has been woven into the landscape for millennia. The fruit is hand-harvested from traditional trees and rushed to the mill for first cold pressing within hours.

Unprocessed and early-harvested, the oil retains an unusually high polyphenol load and a bright green hue. The flavour is assertive but balanced: green herbs, artichoke, and a warm peppery note that builds in the finish.
