A smooth yet complex Moroccan organic extra virgin olive oil with a high polyphenol profile and a high smoke point. Notes of ripe green olive, fresh cut grass, green almond and a gentle, lingering pepper finish. Polyphenol-rich and balanced, it performs beautifully both raw and in medium-heat cooking.

The story of this lot

Atlas Olive Oils is built around a single family estate in the Beni-Mellal region at the foot of the Moroccan Atlas Mountains, where the Aqallal family has been cultivating olives since 1887.

This early-harvest organic extra virgin is cold-pressed from Picholine Marocaine olives grown without synthetic pesticides or fertilisers, certified USDA Organic and EU Organic. The oil is lab-tested for high polyphenols and a low acidity around 0.2%, then bottled in a light-protective dark-glass bottle.

The 1 L (34 fl oz) size is the signature format used by award-winning chefs who prize the oil for its stability, smooth finish and versatility from finishing to light sautéing.
