Olive Oil Acidity Explained

Free acidity measures the percentage of free fatty acids in the oil, expressed as oleic acid. It is a chemical indicator of how healthy the fruit was and how well it was handled between picking and milling — bruised, fermenting or slowly processed olives produce higher figures. Extra virgin olive oil must sit at 0.8% or below; the best oils arrive between 0.10% and 0.30%. You cannot taste free acidity directly, and a very low number does not guarantee a good oil. It tells you the fruit was sound, nothing more.
What raises acidity
Fruit fly damage, olives picked off the ground, long storage in piles before milling, and fermentation in the bin. Each of these breaks triglycerides into free fatty acids. A mill that processes within hours of picking keeps the figure low almost automatically.
Acidity is not a taste
The sharpness people describe in olive oil is bitterness and pungency from phenolic compounds, not acidity. An oil at 0.15% can be aggressively bitter, and an oil at 0.7% can taste flat.
