Bread and the table
For dipping, choose an oil with enough character to be tasted on its own: a robust, current-harvest extra virgin with real bitterness and pepper. Bread is a neutral carrier, so a mild oil disappears into it. Pour a shallow pool, use good bread with an open crumb, and skip the balsamic — vinegar masks exactly the qualities you paid for. If you want seasoning, a few flakes of salt and cracked pepper are enough.
