Desert Miracle is pressed from early-harvest Picholine Marocaine olives grown on the edge of the Moroccan desert, where wide day-night temperature swings and dry air concentrate the fruit's phenolic content.
The olives are milled within hours of picking and first cold pressed, yielding around 480 mg/kg total polyphenols at 0.3% free acidity. The oil is certified organic under both USDA and EU norms.
